rDad's Sonoran Blackbean Soup

When it comes to crock pot recipes I tend to steer towards concoctions which provide hearty meals with tons of flavor and very little prep time.  One of the first recipes I posted was my Beer Can Chili and it received great reviews.  So, I decided to offer up a 'chili-esque' style recipe that packs a ton of flavor but does so as a soup.  This recipe is fantastic for curling up on the couch as a family and watching Sunday Night Football.

What'cha need:

  • 1lb. dried black beans, rinsed
  • 6 cups beef broth (organic and fat free is always my preference) 
  • 1 large red onion, chopped (as always, I buy my onions -chopped to save time)
  • 2 jalapeno peppers, seeded & chopped (this is optional based on your kid's ability to withstand a little heat)
  • 1 garlic clove, crushed
  • 1tspn. ground cumin
  • 1tspn. ground oregano
  • 1tspn. ground thyme
  • 1/8tspn. ground cloves
  • 2 (1lb.) ham hocks
  • 1 large tomato, chopped

What to do:

  1. First, combine the following ingredients in your crock pot: dried beans, broth or bouillon, onions, jalapeno peppers, garlic, cumin, oregano, thyme, cloves and ham hocks.
  2. Second, cover and cook on LOW 9-10 hours or until beans are tender.
  3. Then remove the ham hocks and allow them to cool.
  4. Now shred the lean meat and discard the skin, bones and fat.
  5. Next, return shredded lean ham to pot and reheat on HIGH if necessary.
  6. Finally, spoon mixture into individual bowls and top each serving with sour cream and chopped tomatoes.

 

This dish serves up like chili, but is in fact one heck of a soup.  Wino's beware, this dish is best served with a tall glass of ice cold, Sam Adams Summer Ale.  Every time I serve this great recipe for dinner this single dad cannot help but wish football season was already in full swing.  Go Giants!!
