rDad's Peppered Brisket

With the NCAA Collegiate Football season upon us (Go ASU Devils!!), this single dad and his boys are offering up one of our favorite football feasts.  This crock pot peppered brisket is one of our favorite game day meals.  If you get this recipe in the pot and slow cooking before you go to bed on Friday night you and your football crew will wake up to a fantastic smelling kitchen and your football fuel will be ready to go.  Whether you serve this up on a roll or just plate the brisket and pick at it, you won't be disappointed with the amazing flavor this brisket yields.

What'cha need:

  • 1 (4 lb) beef brisket
  • 1 large red onion sliced and separated into onion rings
  • 3/4 tspn. pepper
  • 3 tblsp. all-purpose flour
  • 3 tblsp. brown sugar
  • 2 garlic cloves, minced (garlic powder works as well)
  • 3/4 cup beer (darker beers work best - or something like a Heineken or Stella Artois)
  • 1/2 cup chili sauce

 

What to do:

  1. First, trim the fat from the brisket and cut the remaining brisket in half.
  2. Next, place the onion rings in the bottom of the crock pot.
  3. Now sprinkle pepper evenly over brisket and place brisket halves over the onion rings.
  4. Then place flour, brown sugar and garlic in a small bowl for mixing.
  5. Gradually add beer and chili sauce, stirring until all ingredients are well blended.
  6. Pour the mixture over the brisket.
  7. Lastly, cover the crock pot and cook on high setting for 1 hour then reduce to low setting and cook 6-8 hours our until tender.

This recipe is just as perfect for large gatherings as it is for your college football Saturdays.  You can serve this brisket on its own or you can take it one step further and serve it up as a sandwich.  Just provide your guests with rolls and a bowl of the gravy from the crock pot.  Make sure you have plenty of hearty beer on hand (Anchor Steam or Sierra Nevada work very well) to wash down this tender brisket.  Or, if you want to be the hit of your tailgate party, just cook this up and home and then truck it with you to the game.  Your fellow tailgating maniacs will love you for it.
