rDads Asian Chicken and Rice Stew

Today's recipe is a delicious Asian flavored chicken stew this single dad and his boys tear into.  The stew comes out of the crockpot looking a little funny and somewhat greenish, however it tastes great.  Once your kids get over the 'it looks like boogers' jokes and actually taste this dish they will love it.  You have the rDad guarantee! 

What'cha need:

  • 1 large onion, chopped (as always by this pre-chopped to save time)
  • 2 sticks celery, chopped  (pre-chopped to save time)
  • 1 red pepper, chopped (also pre-chopped)
  • 1 pound boneless, skinless chicken breasts, cut into pieces
  • 1 tbsp fresh ginger, finely chopped
  • 2 medium to large carrots, cut into thirds, then quartered lengthwise
  • 2 garlic cloves, crushed
  • 1/4 cup reduced sodium soy sauce or tamari
  • 1/4 cup orange juice
  • 1 tsp cornstarch dissolved in 1 tsp water
  • 2 cups of white rice (prepared according to your package directions)

What to do:

  1. First, you need to coat the inside of your crockpot with nonstick cooking spray.
  2. Next place the vegetables on the bottom and then lay chicken pieces on top.
  3. Now, combine ginger, garlic, orange juice and soy sauce and then pour the mixture over chicken and vegetables.
  4. Cook on low for 6-8 hours.
  5. Lastly, add cornstarch slurry about 30 minutes before the end of cooking to thicken the juices.

Serve this dish over the white rice and have a glass wine to tone out the 'this looks like barf' jokes coming from your kids.  Just tune them out and when your kiddos clean their plates just look at them and say "Gross, you totally ate chewy monkey snot!"
