Once again my mother has given me the direct order to stop eating dinner at the Brass Rail and sucking down Jamba Juice instead of cooking for myself (apparently she has some fascination with me continuing to further seclude myself in my home). And, admittedly I spend way too much money eating out. Hey I'm single....
When it comes to dinner for my boys this single dad is all about setting the table and having the 'how was your day' conversation. But, on the nights I don't have my boys I get so wrapped up in cleaning, hitting the gym and writing that I often don't have much time for cooking. Plus, once I get the kitchen clean the last thing I want to do is start breaking out the pots and pans just to make a table setting for one. That being said, when Nana asks her son to do something he always makes the effort to get it done (yes mom, I am wearing my seatbelt). Here's a great salad recipe I stole from my local pub I am now passing on to you:
The rDad's Home Alone Flank Steak salad is easy, quick, low fat, high protein and extremely tasty. The perfect dinner that single person who is watching his/her waistline and only has a bottle of wine for a friend.
What'cha need:
- 1lb Flank Steak (you can also use chicken)
- 1 chopped red onion
- 1 chopped red pepper
- 1 tblsp. crushed garlic
- Spring Mix Salad (Fieldhouse Farms Fresh Organic is my rabbit food of choice)
- Two small plumb tomatoes (cut into slices)
- Two ounces of Lowfat Balsamic Vinaigrette
- 1/4 cup crumbled Blue Cheese
What to do:
- First, heat your grill to a medium temperature (since I live in a townhouse my grill is the Crate N' Barrel Panini counter top grill - sort of an expensive George Forman Grill).
- Now, rub your flank steak down with garlic salt on both sides.
- Next, toss that steak on the grill and cook it for about 7-9 mins. per side.
- Once cooked through let the steak sit for about 5 mins.
- Then slice the steak into bite sized, diagonal slices.
- In a salad size bowl combine your red onion, red pepper, garlic and tomatoes.
- Once mixed together add in the steak slices and then combine this mixture with your salad.
- Cover with the crumbled blue cheese and add your dressing.
Bowl this salad up, pour yourself a glass of Clos du Bois merlot and turn on HBO's Weeds (what a kick ass show). I love this salad and you will too.
