Lately I have made a commitment to start cooking for myself on the nights I don't have my boys. Usually I nuke a lean pocket, crack open a beer and call it a night. I found this recipe in Men's Health while reading about all the exercises that might bring back my abs (I forgot how hard it was to get back in shape - weights are heavy). After being completely discouraged by the length of time it is going to take to get back my washboard stomach I decided to just go with the Skirt Steak and a beer instead. So, I made this recipe and I was blown away. I absolutely loved it. Find a perfect steak and this is a great meal for one or two people.
What'cha need:
- 12oz Skirt or Flank Steak (I used a fresh Flank Steak tonight)
- 1 can (15oz) of Cannelloni Beans
- 1 large red onion - sliced
- 2 Tablespoons of Balsamic Vinegar
- 2 Tablespoons of Olive Oil
- 2 Cloves Garlic - minced (I used Garlic Salt)
- Lemon juice
- Salt & Pepper
What to do:
- In a medium pan over medium heat you should cook the onion and 1 tablespoon of the olive oil for about 10 minutes or until the onion slices are soft and medium brown.
- Add the vinegar and cook another 5 minutes or so - I also threw in a few dashes of garlic salt and some pepper.
- In a separate pan cook the remaining olive oil over medium heat.
- Once warm add the garlic, beans and rosemary.
- Cook this mixture for about 5 minutes or so.
- After well cooked you should mash the beans and then add the lemon juice and salt and pepper to taste.
- Salt and pepper the steak and then grill to your liking.
Slice and serve over the mashed beans and sliced onions.
