I know lately I have been posting recipes which require quite a bit of prep time as well as multiple stages of actual cooking and that is so out of character for me. So, in fairness to all of you out there who have very little time to cook and even less available time to wash a mess of pots and pans I am going to share with you one of my easiest, quickest and best tasting recipes of all time.  rDad's BBQ Chicken recipe has the shortest prep time in my cooking arsenal and the chicken comes out of the pot so juicy you can cut it with a fork.  My boys devour this chicken and I love the fact that the labor and clean up involved are practically non-existent. If you want a recipe you can set in the pot and then head off to work without disturbing your morning routine, this one fits the bill.  From this single dad to you....Enjoy!

What'cha need:

  • 1 whole chicken, cut from the bone (or you can use 1 to 2 lbs. of breast meat)
  • 3/4 cup chopped red onion (as always, buy this pre-chopped and save time)
  • 1 can of condensed tomato soup, 15oz.
  • 1/4 cup vinegar
  • 1 tbsp. Worcester Sauce
  • 4 tbsp. brown sugar
  • 1/2 tsp. salt
  • 1/4 tsp. thyme
  • 1/4 tsp. basil

What to do:

  1. Now, for the the best part.....all you have to do is simply drop the chicken into the Crock pot and mix the remaining ingredients then pour the mixture over the chicken. Set the Crock pot to low and cook for 8 hours.

Lately I have been using Pasta Roni as a simple and great tasting side dish. This product is easy to make and my kids eat it up. I am a huge fan of the Butter & Garlic as well as the Parmesan Cheese. The cooking time on these products varies between 5 and 10 minutes.  As a single parent I am all about ease of use.  The more time I can spend concentrating on my glass of wine the better.
