The rDad's Baked Peanut Chicken is one dish this single dad and his boys love. If your kids like peanut butter and you can get them to eat chicken they are going to devour this simple dish. Trust me on this one, your kids will ask for this chicken dish again and again. With only seven steps to the entire meal you'll have plenty of time to uncork your wine while screaming at your kids to quit touching each other.
What'cha need:
- 4 Chicken Breasts (1 to 1.5lbs.)
- 1 cup dry roasted peanuts, ground fine
- 1/3 cup yellow cornmeal
- 2 cloves garlic, minced
- 1 tsp. fresh ginger, minced
- 1/2 tsp. pepper
- 1 tsp. salt
- 1.5 cups flour
- 1 cup of buttermilk
What to do:
- First, preheat the oven to 350 degrees.
- Next, make the peanut mixture by combining the peanuts, corn meal, garlic, ginger, pepper, salt and half of the flour in medium bowl.
- In a separate bowl combine the remaining 2 ingredients, the other half of flour and buttermilk.
- Finally dip the chicken in flour, then in buttermilk, and then roll the chicken in the peanut mixture.
- Bake chicken, covered tightly with foil, 45 minutes in greased, shallow baking dish.
- Carefully remove foil and bake another 20-25 minutes or until chicken is golden brown.
- Remove chicken from baking dish and let it cool.
This dish is best served with a Spring Salad, rice and 7 Heavenly Chardonnay (not for the kids of course).
