rDad's Spicy Chicken Casserole

The rDad's Spicy Chicken Casserole is a great dinner recipe with a spicy Southwestern flair to it.  The chicken, green chilies and peppers are a fantastic mix....my boys and I actually plan a Mexican night around this recipe.  There are a couple of extra steps involved in this recipe, but the extra prep time and longer cook time are well worth the investment.  Plus, standing in a hot kitchen is always a great excuse to crack open another beer.  Have one on me....

What'cha need:

  • 2 regular size cans of condensed cream of chicken soup
  • 1 regular size can of condensed celery soup
  • 1 can diced green chilies (Ro-Tel works well)
  • 1 large red onion (buy this already chopped - saves time)
  • 1 green pepper (once again, buy this chopped - just a suggestion)
  • 1 to 1.5lbs of chicken breasts, cooked and chopped (Grill or cook in your crock pot for 4 hrs. on high)
  • 1/2 a cup of water from juices of chicken in crock pot
  • 1 lb shredded cheddar cheese (I use the pre-shredded packages of Kraft and for this recipe the Mexican Mix works well)
  • 1 pkg. of small tortillas 

What to do:

  1. First you need to sauté the chopped onion and green pepper in oil. 
  2. Next add both soups, the green chilies and the chicken water (I toss in a few spots of Tabasco Sauce for extra flavor and kick).  Stir well. 
  3. Now add cooked chicken to the soup mixture.
  4. Cover the bottom of a 9x12 baking dish with butter.
  5. Then cut the tortillas into quarters and cover the bottom of the baking dish.
  6. Put half the soup/chicken mixture over the tortillas. 
  7. Then cover the chicken mixture with shredded cheese.
  8. Repeat the layers until you are out of mixture.
  9. Place in the oven and bake the casserole at 375°F for 30 minutes.

 

Serve with salsa, sour cream and salad.  If you are like me you crave Dos Equis Amber with Mexican food....gotta have it.
