Here is a great Chicken & Rice Casserole recipe sent to us by Christi.  She is a single Foster Mom living in South Carolina.  Talk about someone doing their part and giving back!!  This single dad wishes her all of the best and gives her my thanks for being a great Mom and role model to kids in need.

Thanks for the recipe Christi!!!!

What'cha need:

• 3 cups diced cooked chicken
• 1, 10 ¾-ounce can condensed cream of celery soup
• 1 medium onion, diced and sautéed
• 1 cup light mayonnaise
• 1 ounce can water chestnuts
• One 6-ounce box Uncle Ben’s long grain drained and chopped and wild rice, cooked according package directions
• Two 14 ½-ounce cans French greens
• Beans, rinsed and drained
• 1 cup grated Sharp Cheddar cheese
• One 4-ounce can pimentos, rinsed and drained

What to do:

1. Preheat oven to 300 degrees. 
2. Next, mix all ingredients together and pour into a 3-quart casserole dish.
3. Then bake for 25 minutes.

As single father having such an easy recipe on hand.  If your life is like mine I am sure most of your nights go by at light speed between homework, games and trying to keep your kids off one another.
