Crockpots & Casseroles

I know my last dish was also a carnitas recipe, but in spite of the minor duplication in dishes this latest entry is vastly different from the previous dish.  My mom (Nana) will soon be out for the summer to hang with my three crazy boys and that means this single dad is going to be doing quite a bit of cooking.  And, the one thing Nana always asks for is Mexican food.  Not quite sure why being that she lives in Houston, but who I am to question.  When free daycare is being provided my motto is always, 'what Nana wants is what Nana gets'.  The one thing I love about this Salsa Verde Carnitas dish aside from its simplicity is the fact that you can save it for sandwiches or even serve these carnitas over rice. Either way you and your family will love the results.

 

Mexican night is a big night in the rDads house.  My boys get an excuse to make their own burritos which always results in re-fried beans being flung around like grenades in the Gaza Strip and this single dad uses Mexican night as an excuse to drink Dos Equis Amber and quietly reflect on past experiences in the Gulf of Mexico.  Good times baby.  Good times.  One of our favorite Mexican recipes is the very simple rDads crock-pot pork carnitas. 

 

With the NCAA Collegiate Football season upon us (Go ASU Devils!!), this single dad and his boys are offering up one of our favorite football feasts.  This crock pot peppered brisket is one of our favorite game day meals.  If you get this recipe in the pot and slow cooking before you go to bed on Friday night you and your football crew will wake up to a fantastic smelling kitchen and your football fuel will be ready to go.  Whether you serve this up on a roll or just plate the brisket and pick at it, you won't be disappointed with the amazing flavor this brisket yields.

 

When it comes to crock pot recipes I tend to steer towards concoctions which provide hearty meals with tons of flavor and very little prep time.  One of the first recipes I posted was my Beer Can Chili and it received great reviews.  So, I decided to offer up a 'chili-esque' style recipe that packs a ton of flavor but does so as a soup.  This recipe is fantastic for curling up on the couch as a family and watching Sunday Night Football.

 

Today's recipe is a delicious Asian flavored chicken stew this single dad and his boys tear into.  The stew comes out of the crockpot looking a little funny and somewhat greenish, however it tastes great.  Once your kids get over the 'it looks like boogers' jokes and actually taste this dish they will love it.  You have the rDad guarantee!
