Mexican night is a big night in the rDads house. My boys get an excuse to make their own burritos which always results in re-fried beans being flung around like grenades in the Gaza Strip and this single dad uses Mexican night as an excuse to drink Dos Equis Amber and quietly reflect on past experiences in the Gulf of Mexico. Good times baby. Good times. One of our favorite Mexican recipes is the very simple rDads crock-pot pork carnitas.
What'cha Need:
- 2-3 lbs pork roast
- 1 tspn black pepper
- 1 tspn garlic powder
- 1 tspn onion powder
- 1/2 tspn chili powder
- 1/2 tspn cumin
- 1/2 tspn onion salt
- 1/2 tspn salt
- 1/2 tspn coriander
- 1 cup chicken broth
- 2 cups shredded cheese
- Shredded lettuce - amount depends on your preference
- Mexican rice (I use Rice a Roni - it is simple to make)
- Can of refried beans
What to do:
- Mix all of the spices together and sprinkle three quarters of the mixture on the roast - place the remaining spice mix on the side.
- Put the roast and broth in your crockpot on low for 6-8 hours.
- Remove the roast from the crock-pot and drain the liquid.
- Put the roast back in the crock, shred it with the remaining seasonings and about 1/2 cup of water and stir.
This recipe is best served with some sour cream and guacamole on the side. My boys love the tortillas warmed up. Throw in a few multi-colored sombreros a pinata and you have yourself a party.
