rDad's Chinese Crock Pot Ribs |

In this dad’s house 9 times out of 10 meat is the main ingredient in our dinners. As much as my mother would like to see me trick my boys into thinking Tofu is chicken there is no way my boys and I could ever stop being carnivores. And, ever since a very cute, blond waitress at Chili’s convinced my boys to try their rib tips I have been searching for a crock pot recipe based around ribs my boys would love. This Chinese Rib recipe fits the bill perfectly. Two hours in the crock pot and dinner is served.
What’cha need:

2 tablespoons honey

2 tablespoons rice or white vinegar

2 tablespoons soy sauce
-
½ cup ketchup
-
1/4 teaspoon five spice powder (Oriental Seasoning works just as well)

1 small onion -- finely chopped
-
2 teaspoons minced fresh ginger
-
1 garlic clove -- minced
-
1 teaspoon cornstarch
-
1 tablespoon cold water
-
4 pounds pork or beef ribs, separated

hot cooked rice
What to do:

In a 3-1/2 quart crock pot, combine ketchup, honey, vinegar, soy sauce, five-spice powder, onion, ginger and garlic.

Position a broiler rack 6 inches from the source of the heat and preheat the broiler.

Broil the ribs, turning once, until browned. About 10 minutes.

Transfer the ribs to the crock pot.

Stir to coat the ribs with the sauce.

Cover and slow cook until ribs are tender. 5-6 hours at 200 degrees (low).

Transfer the ribs to a platter and cover with aluminum foil to keep warm.

Skim the fat from the surface of the sauce and discard.

In a medium saucepan bring the sauce to a simmer over a medium heat. Cook until reduced to about 1 cup, 6-8 minutes.

Stir in the cornstarch mixture and cook just until thickened.

Pour the sauce over ribs and serve immediately with hot cooked rice.
Sounds like quite a bit of work in the beginning, but this dish is well worth the added efforts. I typically serve this ribs with Trader Joe's Edamame and Trader Joe's Vegetable Dumplings. As with all of my Asian based dishes these Chinese Ribs are best washed down with a cold glass of Sapporo.
