rDad's Crazy Crock Pot Lasagna |

I know what you are thinking...."There is no way Lasagna can be cooked in a crock pot and still turn out." This single dad thought so as well until I tried this dish and now I am a believer. My kids call this dish red puke goulash, but they still eat it up (boys are gross, what can I say). The prep time is longer than my usual posts and the steps are a little more involved, but this Lasagna dish is well worth the trouble. Try this dish once and you will never make Lasagna in the oven again.
What'cha need:
- 1 1/2 pounds Italian Turkey Sausage (I use the Jenny-O sweet sausage)
- 2 medium onions, chopped (buy this pre-chopped)
- 1 large jar spaghetti sauce (Whole Foods has a 360 Brand which is fat free and amazing)
- 2 tsp Italian seasoning mix
- 1/2 tsp oregano
- 1 tbsp minced onion
- 1/4 tsp thyme
- 15 oz container of skim ricotta cheese
- 1 cup shredded Parmesan cheese
- 3 cups shredded mozzarella cheese
- 12 uncooked lasagna noodles
What to do:
- First you want to spray crock pot with non stick cooking spray.
- Next you need to cook the sausage and onion and then drain.
- Then add sauce and seasonings.
- Mix this up real well and then reduce heat to low and allow this to simmer.
- Then combine ricotta cheese, Parmesan cheese, and 2 cups of the mozzarella cheese.
- Spoon 1/4 of the sausage mixture into the crock pot and top with the lasagna noodles (it is fine to break the noodles to make them fit).
- Top with half of the cheese mixture.
- Then add another 1/4 of the sausage mixture and then more noodles.
- Make another layer of cheese, sausage, and noodles, then finish with remaining sausage mixture.
- Cover and cook on low for 6 to 8 hours or you can cook this on high for 3 to 4 hours.
- Sprinkle with remaining mozzarella cheese, cover and cook 15 minutes until cheese is melted.
Serve this up with some Garlic Bread and a mixed green salad and you have a tasty and healthy meal. And, don't forget the Franciscan Chardonnay.
