Here's a recipe that's a new one for this single dad, but it sounds great. Thank you to Claudia for submitting her amazing Firefighter Mac n' Cheese Hotdog Casserole recipe. I am sure my boys will love this one....especially when I tell them the recipe comes straight out of a Firefighter/EMT House. If this meal can satisfy a Firehouse full of hungry Firefighters I am sure it will take care of my three boys hunger pains. Thanks Claudia!!
What'cha need:
- 7 ounces elbow macaroni, cooked & drained
- 1/4 cup onion
- 1/4 cup green pepper, finely chopped
- 1/2 teaspoon garlic powder
- 1 package hot dogs, sliced (for a spicier mix you can use Hot Italian Sausage)
- 1 cup reduced fat cottage cheese
- 1 cup light sour cream
- 1 cup cheddar cheese, shredded
- 1/3 cup crushed Lays potato chips
What to do:
- First, saute the onions and green peppers until they are softened.
- Next, add garlic powder and then combine the pasta, onion mixture, hot dogs, cottage cheese, and sour cream in a large bowl.
- Now mix the ingredients very well.
- Finally, pour ingredients into a casserole dish and then top with shredded cheddar cheese and crushed chips.
- Bake at 350F for 30 minutes and serve.
Serve this dish up with some Bush's Baked Beans, Root Beer for the kiddos and some cold Miller Lite for yourself.
