rDad's Bigboy Beer Chili is a very simple recipe that takes a day to make, but less than 30mins to prepare. My boys love this chili and beg me to make it at least once a week. The great thing about the recipe is that this single father can very easily toss everything into the crock pot and go to work. The fat content is very low and the serving size is about 10 bowls (my kids eat a ton....).
What'cha need:
- 1lb of ground turkey
- 1lb of Jenny-O Sweet Italian Turkey Sausage
- 2 cans of stewed, chopped, Italian tomatoes
- 2 cans of red kidney beans (drained)
- 2 cans of chili beans (drained)
- 1 can of sweet kernel corn
- 2 small cans of green chilies, diced and chopped
- 1 bag of chili mix (any kind works - I generally use Bubba's - you can never go wrong with a guy named Bubba when it comes to chili, BBQ, guns, chewing tobacco, NASCAR and tow trucks)
- 1/2 large red onion, chopped and diced
- Flour (thicken the mixture to your liking)
- Garlic powder
- 1/2 bottle of Miller Lite (or any beer of your choice)
- Tabasco Sauce, add at your discretion (too much and you may induce some unwanted rectal explosions in your youngsters!)
What to do:
- The day/night before you make the chili take the time to brown the turkey - add the garlic powder to your liking. The sweet sausage usually comes in links so you have to remove the turkey from the lining. Brown, drain and refrigerate.
- The next moring combine all ingredients (do not add the flour or tobasco until 30mins before serving) into a large crock pot and set on low heat for at least 8hrs.
- That night you can season and thicken to taste.
- Serve with corn bread, cheese, and low-fat sour cream.
This is a solid meal that goes down well on cold nights. Low in fat and high in protein.
Let me know how yours turns out.
Good luck and good eating!!
rDad
