rDad's Red Beans and Rice is a great recipe for cold nights. My boys and I love to spoon this dish up and hit the couch for some serious movie watching. As a single father easy prep times are key. The prep time for rDad's Red Beans and Rice is minimal and once set this dish practically cooks itself. You can substitute the meat section for any type of Kielbasa or Sausage you choose...I typically go for the Turkey Kielbasa in the Sweet or Mild and then season the mixture with Tabasco.
What'cha need:
- 1lb. of Red Beans (get the small ones)
- 2lbs. of Turkey Kielbasa (Hot, Sweet, or Mild)
- 1 Cup of diced celery
- 2 Medium green peppers
- 1/4 teaspoons of cloves
- 1 teaspoon of Chili powder
- 2 Pieces of Bay leaf
- 1/8 teaspoon of Oregano
- 1/8 teaspoon of Thyme, ground
- 1/4 teaspoon of Cayenne pepper
- 2 Cups of white long-grain rice (uncooked)
What to do:
After you are done chasing your kids around for the night and have managed to bathe them you can now break open a nice bottle of Pinot Grigio and get to work on your next night's dinner.....
- Put dry red beans in crockpot; fill with water halfway, turn on low and let cook all night.
- The next morning add rest of ingredients and more water if necessary.
- Cook on low until dinnertime.
- Cook rice to directions and serve.
This meal goes great with a nice glass of Barefoot Pinot (this stuff is $4.99 and tastes fantastic).
