rDad's Taco Goulash recipe is one that takes very little prep time and serves up in under three hours of cook time. I usually get this one started in the afternoon just after the boys get home from school. By the time we are done with complaining about homework, doing homework, complaining about homework, calling each other names, asking for something to eat and finishing homework (this takes about 2 hours, three Advil and has yielded this single dad a lifetime of gray hair) this concoction is ready to serve up.
What'cha need:
- 1/2 cup finely chopped red onion (I buy this stuff already chopped from Albertsons - what can I say, I hate the tedious nature of chopping vegetables)
- 1/2 cup chopped celery (also buy this pre-chopped)
- 4 cans (14-1/2 ounces each) tomatoes with liquid (I use the tomatoes in the Mexican Recipe)
- 1 can (8 ounces) tomato sauce
- 1/2 cup salsa (I use Pace mild)
- 1 package taco seasoning mix
- 1-1/2 lbs. of the Jenny-O Sweet Italian Turkey Sausage (you can use ground beef)
- 2 cans (14 ounces each) kidney beans, with liquid
- 1 can (17 ounces) corn, with liquid (yes)
- Grated cheddar cheese (we use the Kraft Colby mix)
What to do:
- Sauté celery and onion together in a little butter.
- Add ground turkey and cook until browned. Drain any excess fat and juices.
- Combine celery, onion, beef, and remaining ingredients except cheese in a crock pot. Set on low and let cook until you are ready to eat.
- Unlike chili and other dishes this taco recipe can be ready in 2 hours.
- If you feel like more liquid is needed feel free to add more canned tomatoes or chicken broth.
My boys and I like to add a little cheese on top, some crushed tortilla chips and even a few dabs of fat free sour cream. This dish has become a favorite in my house....when the boys have their friends spend the night this is the dish most often requested. The boys and their friends like to use the Tostitos Scoops brand chips to make mini tortilla bowls with the chips.....messy and delicious.
