I recently came across this great recipe and instantly this single dad knew he had to share it. Low fat, low calorie, extremely tasty and VERY easy to make. This BBQ chop recipe takes less than 5 minutes to prepare, less than 20 minutes to make and the results are amazing. The chops are almost tender enough to cut with a fork and are filled with tremendous flavor.
What I love most about this recipe is the fact that I can prep the chops the night before in about 5 minutes. The next morning I don't have a crock pot to turn on and I can spend my time corralling my children for school. Lord knows if I don't make sure my boys clothes match and their teeth and hair are brushed they would walk out the front door looking and smelling like they were homeless.
What'cha need:
- 3 or 4 boneless pork chops (fat trimmed off)
- 1/4 cup bottled reduced-fat Italian dressing
- 1/2 cup bottled barbecue sauce (I use the low sugar option from Whole Foods)
- 1 teaspoon chili powder (optional)
- 1/2 sliced red onion (optional)
What to do:
First, open a bottle of Pinot Grigio, pour yourself a well deserved glass and thank the Wine Gods for their stress relieving nectar.
- Stir together Italian dressing, barbecue sauce and chili powder (if you chose to add it).
- Pour the contents into a plastic gallon bag or into a shallow container and add the chops.
- Place the chops in your fridge over night for marinating.
- Long after you have threatened your kids with corporal punishment in order to get them to do their homework and your family is ready for a great meal, you can start things off by heating nonstick skillet over medium heat.
- Now, shake excess marinade from the pork chops and place in them in the skillet (SAVE THE REMAINING MARINADE).
- You want to brown chops on both sides - be sure not to overdo this!!
- Lastly, add the remaining marinade and onions to the skillet.
- Cover skillet and simmer over medium heat for 4-5 minutes. Plenty of time to polish off your glass of wine.
Serve this dish with a side of corn and salad.
