These Mango Pulled Pork Sammies make for a great Football Sunday dish.  Serve em' with cold beer and baked beans and you've got yourself an amazing football and food combo.  Get this recipe started before you watch the NFL Sunday on Fox and you'll be eating Mango Pork Sammies for dinner. Depending on how spicy or sweet you want this recipe to be you can choose your BBQ sauce accordingly.

What'cha need:

  • 2-3 lbs. pork butt roast (my boys and I can down 2lbs.....as a recommendation use beef brisket - much leaner and easier to trim the fat.)
  • 1 red onion, sliced large
  • 1 Mango, skinned and diced
  • 12 oz or so of BBQ sauce
  • 1 red bell pepper sliced
  • 4 cloves of garlic, smashed
  • Salt and Pepper to taste

What to do:

  1. Dice mango small and place in the bottom of the crock pot with onions and garlic.
  2. Put pork roast on top and cover with BBQ sauce.
  3. Cook on high for 3 hours.
  4. Remove lid and add strips of bell pepper.
  5. Cook for another 3-4 hours until pork is done.
  6. Shred with a knife while still in the pot and then dish up and serve on grilled rolls.

I typically serve these sammies with Bush's Baked Beans.
