As a single dad, and single guy, it is often necessary to have a fall back dish. I picked this recipe up a few years ago and once I mastered the dish I actually prepared it a few times for "date nights" at casa de rDad. Being that I have been unable to find out the secret to dating in the East Bay I haven't made this dish in quite a while. I wouldn't say this is a kid friendly dish due to the jalepenos and black olives, but if you can get your kiddos to eat those ingredients then I am all for it. I love this dish...it is actually one of my favorites.
What'cha need:
- 1lb. Jenny-O Sweet Italian Turkey Sausage (this needs to be cooked and sliced)
- 4 cloves fresh garlic, pressed (or powdered garlic - I admit I cheat and use powdered garlic based on time constraints and my all out laziness)
- 1 green jalapeño chili pepper finely minced
- 1 medium red onion, chopped (as always, buy this pre-chopped)
- 1 28 oz. can chopped tomatoes
- 1 roasted red bell pepper, chopped
- 2 tbsp. rinsed and drained capers
- 1/4 cup white or light bodied red wine
- 3 ounces tomato paste (1/2 of a 6-oz. can)
- 1/2 cup sliced black olives
- 2 tbsp. chopped fresh basil
- 1/2 tbsp. extra virgin olive oil
- 1/2 lb. scallops (optional)
- Angel Hair Pasta (about 1lb. - I get mine gluten free from Whole Foods)
- 6 tbsp. fresh grated Parmesan Cheese (optional)
What to do:
1. Lightly spray a large non stick skillet then saute garlic, onions and chilies together until onions become tender.
2. Next, add tomatoes, roasted bell pepper, tomato paste, wine and salt to onion mixture and bring to gentle boil stirring often. Reduce heat to low and simmer for 20 minutes to an hour.
3. Then add sausage, capers and olives to sauce. Increase heat to medium again and add raw scallops along with their nectar continuing to cook stirring often until scallops are no longer translucent (if used), an additional 5 to 8 minutes.
4. Now add olive oil and fresh basil to sauce.
5. Lastly, add the angel hair pasta to the sauce mixture and toss all ingredients together gently. Remove from heat and serve with fresh grated cheese.
